Strawberry Bruschetta March 10, 2013

Strawberry BruchettaTHINK SPRING with this appetizers. Who said you need tomatoes for Bruschetta? This recipe comes from Amy, Tranquility’s front desk staff.  This month our staff will be submitting their favorite healthy appetizer recipes. Happy March! Hope you enjoy!


1 cup strawberries, hulled and diced
1 tbsp. sugar or Stevia to taste
1 french baguette sliced (easily substitute for gluten free if desired) 
4 oz. goat cheese
1 tbsp. olive oil
2 tsp. balsamic vinegar
¼ cup minced basil leaves
Freshly ground black pepper


Combine the strawberries and sugar in a small bowl; toss to combine.  Let the berries macerate for about 30 minutes so that they begin to release their juices.  Spread a thin layer of goat cheese on top of each baguette slice.  Top each slice with spoonfuls of the strawberry mixture.  Drizzle lightly with olive oil and balsamic vinegar.  Top each slice with the basil leaves and cracked pepper, to taste.

So topic of discussion at morning huddle was…. what is healthy? Is it paleo? Gluten-free? Sugar free? Butter free? Well my friends that is a complicated answer that I am on the eternal mission to answer. Right now I’m reading a book called “Why do we get Fat?” It was recommended to me by Sally, Tranquility’s Psycotherapist and so much more.  I’m not done with the book yet, but so far I can tell you that SUGAR IS BAD, PROCESSED AND REFINED FOODS ARE BAD, FLOUR IS BAD. Again not done with the book yet, but really this makes sense. So with that being said, this recipe seems like a keeper. It was submitted by Tanja, Tranquility’s newest Esthetician. I had a facial from her two weeks ago… SHE IS GOOD!!!
– 8-10 strawberries
– 2 oz.plain or vanilla Greek yoghurt
– 1/2 banana
– 1 tbsp sliced almonds
– 1/2-1 tsp honey (optional)

1. Hollow out the strawberries
2. Mash the banana in a bowl and add the yoghurt
3. Add mixture to inside strawberries and top with almonds
